Coffee is dynamic and akin to wine with flavor changes every year based on environmental factors.

Roasting single sourced coffee without adding fillers such as Robusta will result in slight variations from year to year.

Once the roasting process has completed the most flavorful notes and caffeine are present during a 1-3 week window after roasting.

To save waste we roast in small batches using a longer roast time to develop the most flavor possible.

This is a more expensive process, however we feel that the quality outweighs the cost.

FLAT IRON (Light Roast)

ROAST: Light Roast.  (Full City)

BEST USED FOR: All types of coffee beverages:  Espresso, Drip Etc.

FLAVOR PROFILE: Bitter sweet notes with a thick and opaque body, tastes of Almond Chocolate and Stone Fruit.

GRADE: Highly graded with a score of 88.7% using 100% Arabica beans with a screen size of 15 to 18.

PAIRING: Milk Chocolate and Cream based deserts, flourless chocolate cake, and Scones

CIGAR PAIRING:
This Roast pairs well with cigars with a Medium Strength Corojo wrapper and Cameroon Filler (i.e. La Aurora Gold, Oliva Serie G)

CASA MILA (Medium Roast)

ROAST: Medium Roast.  (Full City+) *

BEST USED FOR: All types of coffee beverages:  Espresso, Drip Etc.

FLAVOR PROFILE: Silky Smooth texture with an amazing balance between high and low tones.  Tastes of fruited chocolate with rustic berries can be noted.

GRADE: Highly graded with a score of 88% using 100% Arabica beans with a screen size of 15 to 18.

PAIRING: Fruit pies, chocolate, parfait, figs and Flans.

CIGAR PAIRING:
This Roast pairs well with cigars with a Mild Strength Connecticut wrapper and Honduras or Cameroon binder
(i.e. La Aurora Sapphire, Henry Clay War Hawk)

FONTANA DI TREVI (Dark Roast)

ROAST: Dark  (Light Vienna) *

BEST USED FOR: All types of coffee beverages:  Espresso, Drip Etc.

FLAVOR PROFILE: Complex body with outstanding citrus notes, tastes of toasted almond bitter sweet chocolate laced with fruit.

GRADE: Highly graded with a score of 89.7% using 100% Arabica beans with a screen size of 16 to 18.

PAIRING: Vanilla Ice Cream, Poppy Seed Rolls and Biscotti.

*Note the Medium and Dark Roasts are not required to be roasted to a shiny dark color.  Large roasters need to roast very dark to create a consistent flavor.  They do this because they obtain beans from many regions to satisfy large sales volumes.  Roasting dark to the point of the beans look oily and dark results in the majority of flavor being burnt off and charred giving a bitter flavor and upset stomachs.
